COFFEE ROASTERS

Firebat Coffee Roasters is a small-batch, specialty coffee roaster based in Oakville, Ontario. Established in 2016 with an inspiration to create a bridge between Salvadoran coffee farms & Canadian coffee community. They source high scoring coffees directly from small scale artisan coffee producers in El Salvador.

 

Firebat stands for three principles: flavour, sustainability, and transparency. While sourcing coffees with complex and consistent flavour profiles, they also look that those coffees are rooted in sustainability. All their beans are sourced through Direct Trade with no intermediaries; hence they personally know the producers they work with.  Direct Trade allows the producers to gain independence from the commodity market and get significantly higher price for their beans. 

 

Firebat has partnered with producers who are committed to their local communities and to the environment by following shade-grown practices. Shade-grown coffee is grown under the canopy of trees in harmony with nature. Most of El Salvador’s remaining forest is associated with coffee production and choosing shade-grown coffee can have a great impact on preserving local eco-systems while providing rural communities with a reliable source of income for years to come.  

 

Firebat's beans are slow roasted in small-batches weekly. Slow roasting develops all the good flavours and aromas inherent to the great work achieved by the producers during the farming stage. Firebat coffees are sweet, balanced and clean. They have a wide, seasonal selection of single farm coffees to showcase different bean varieties and processing methods for anyone to find the kind of coffee they like. For each coffee they share the origin story from the farm, how the beans were grown and processed.

LA DIVINA – PACAMARA HONEY

This is their second year bring coffee from La Divina. Roberto selectively harvests and processes by varietal separation. All beans are harvested by hand and dried on site at La Divina farm. This lot is a honey processed pacamara bean. This pacamara honey starts with a citric brightness just the right acidity level that gets balanced right away by a smooth and silky sweet finish. This coffee is great for pour over methods as it has many flavour layers.

SANTA RITA – BOURBON WASHED

This great red bourbon from Santa Rita farm delivers a complex cup with low acidity. It carries caramel-like sweetness while hints of chocolate and cinnamon add more layers to this great coffee. After harvest, this coffee was washed to remove the cherry and fruit mucilage covering the bean, and then sun-dried on patios for 1-2 weeks. Great choice for espresso, and if you like low acidity coffee, this is yours to try.

FIREBAT ESPRESSO

Their espresso is one of the most versatile coffee in their line, for the home barista it provides a smooth and consistent shot that is mellow sweet with little acidity and no bitterness. Firebat Espresso is a flavour experience that is sweet and pleasant with little acidity, and no bitterness. This is Firebat “omni-roast” coffee which is a hit among dark coffee lovers for filter coffee and wonderful for espresso based drinks.  Great on its own or with dairy/non-dairy milk.
