The name Mainstay, is in reference to a nautical term. The mainstay on a sailboat is the rope (or line) that extends from the main-top to the foot of the foremast. Mainstay is now from Finca El Terrerito in Honduras. Finca Terrerito, is the birth place of the Lopez Family’s involvement in coffee. Finca Terrerito is a model farm as it has served the local community and the country of Honduras.

Jose Francisco and his wife Emma have a small farm in the Jinotega region of Nicaragua. Their coffee plants are mixed in among cilantro, carrots and other vegetables which they farm. He is currently in the process of increasing the area of coffee cultivation of his farm located over 1400 meters above sea level. Due to this elevation his coffee takes longer to mature creating a special flavor. Jose's coffee has notes of cherries, applesauce and a medium acidity.
